a-taste-of-russiaThere are many websites that offer different Russian recipes from ancient times to our days. You can find Russian vegetable recipes, dessert, tea cake recipes, and many more. Even Russian Christmas recipes, despite of the fact that Russian people have not been celebrating Christmas till recent time.

Russian recipes reviews will bring to you some new flavor of Russian cuisine, Russian culture, literature and music.

Russian cuisine has so many varieties that it’s difficult to mention all of them. There are many recipes that have connections with cuisines of different origins, like French, Italian, Scandinavia, Spanish, etc.

I live now in the UK and my parents died many years ago. Many changes happened during last 20 years including food habits and what Russian people eat now. Very often, their menu now includes ready-made and fast food, like Hamburgers and McDonalds . Regret, progress sometimes brings not only good things.

I want to share with you some of my knowledge about real Russian food and Russian recipes that ordinary Russian families, like our family, usually use.

So, here what we had during the normal week day:

Breakfast

Usually we had good breakfast before working day, breakfast was different each day, it included fried eggs, boiled eggs, omelette, or “kasha” which is a native Russian dish – different groats, bases on milk, sweet or slightly salted; slices of cheese or ham with bread and butter, black tea or coffee.
For us it was enough, tasty breakfast.

Lunch

We call it “obed” and it was the main meal; it took place  around one hour from 12 or 13.  In Soviet Union’s time all adults had job, people had lunch in work place. Most of companies or organizations had their own restaurants where employees had their meal. If the job was not far from home, people visited home during the lunch break to have meal there.

Lunch included:

First dish, called “zakuska”, this is cold or hot appetizer, like vegetable salad or combination of different ingredients, fish, meat, eggs, potato, cheese.

Second dish was either soup of different varieties, like chicken soup, meat soup, fish soup, or vegetable soups, like schi, borsch, rassolnik, solianka, okroshka.

Third dish was meat, like beefstoganoff, or fish dish, piece of boiled or fried chicken, meat or fish served with fried or mashed potato, groats or vegetable, and very popular “pelemeni”.

And finally we had very popular sweet drinks, like compote, kisel, black tea or coffee.

It seems a lot,  but the size of the dish was probably one third of what you will have in restaurant today. Probably, that was the main reason why the obesity very rare case in Russia. Regret this is not the case now.

Dinner

In Russian it’s called “uzhin” that usually took place at around 6-7 o’clock in the evening when everybody returned home from work.

Generally, it was one dish meal, piece of meat, beef stroganoff, chicken or fish garnished with potato or some kind of groats. Finally we had something sweet, like cake, biscuits with tea or compote.

You can see that during the ordinary days recipes were rather simple. Most important thing is that meal prepared at home was much healthier and, I can say, testier.

Of course, menu and recipes for holidays or remarkable days were quite different, more complicated with more varieties. And you can find different recipes that came from different countries.

Russian people really like and enjoy good food and good drinks.

It has penetrated the household recipe and was used in parallel with national food, particularly in big cities. It is still famous in former Soviet republics.
